Most full evaporators have a flue (or sap) pan with raised or dropped areas to increase the surface area, and a separate flat pan up front, typically called a syrup pan.

A hybrid pan combines both of these features into one pan, the back portion with drop flues (usually) and a flat front section, separated by a divider.

Just to elaborate on what Riley said - the "normal" evaporators have 2 pans - a flue pan and a syrup pan. They are typically connected externally by some fittings. A hybrid pan is all one unit.

MORE ELABORATION

For the larger pans this two pan setup gives the following benefits:
- reduces weight and size for handling. The flue pans are quite heavy.
- if you scorch/damage or otherwise need to replace a pan you only have to replace one part.

For small sizes - specifically the hybrid sizes I have seen available neither of these is a big issue and the combo units offer a nice option.

With Leader,a hybrid pan is their Max Flue pan with drop and raised flues,though ours are totally raised.

Ah, yes, that is another totally different us of the term. Now I am not sure which the original poster meant.
