What's going on I finished my last batch of the season today 47 gallons boiled down to about 5 liters . End result my syrup is dark and tastes a little strange what did I do wrong ?

probably nothing....it could be just the end of your season where the song birds start to sing, the buds on the maples come out, and all the muddy holes have dried up because the frost is out of the ground.

syrup usually gets darker and stronger as the season progresses. You may be getting late enough in the season to be getting Grade B or Commercial syrup. If it's too strong tasting for pancakes, use it for cooking, it's great in baked beans.

Thanks for the info guys , not sure what I would do without this site I was think I had scraped 47 gallons of sap
