how many gallons of sap at 2.5 to have 26 gallons of sap at 25 percent..reason is I'm making maple schnapps and need 25 percent sap to make it...where do I stop boiling at what degree

Here's some info you might find helpful:

Table 1 will tell you that the boiling point elevation of a 25% sucrose solution, above the boiling temp of water, is 0.75 C. Good luck measuring that.

If you have a hydrometer like used in wine or homebrew making the SG of a 25 brix sucrose solution is about 1.106.

You would need about 285 gallons of sap, if I did my math right. I am not sure about the temperature, but it should be in the 215 to 216 degree would be my guess.

I think you'd need 260 gallons of sap.
