Always a sad day when you finaly chase the sweet out of the evaporator!

I am done boiling off the last sap, about 600 gal that ran since thursday, just started feeding permeate water thru to chase out the last sweet in the evaporator! Always seems so sad and puts a official end on the season! But it sure was a nice and long productive season!

wow. that's pretty good. I had pulled taps 2 weeks ago and thought about putting a few back in for that cold snap.

how was the sugar content? was it a dark syrup?

congrats on hanging in there. lots of work when it gets warm.

The sugar content dropped off on the days we didnt freeze up as would be expected, but the weird part is even the nasty white sap that some has been sitting since thursday in the tanks made a syrup with a color right on the edge between dark a and b ! the lightest commercial syrup i have ever made i must say!

Not me i couldnt wait to shut the evaporator off lol its been a long season but time for a little vacation
