View Full Version : Temperature sap turns to syrup

I know 7.1 * above boiling point of water brings sap to 66*brix. I was calibrating thermometers today and where I'm at in Adirondack's all my thermometers had water boiling right around 209*

I know that 212* is at 29.9" barometer at sea level. I was wondering if anyone else had such differing temps or if it's not that unusual.

Hopefully the good Dr. reads this and chimes in! :confused:

Im at 679 feet above sea level and I don't have syrup til 221...222 F and my boiling point of water is arou d 210.7 F

I'm about 10 feet above sea level, and water has been boiling consistently @ 214F. And I've been at syrup around 224F. That would explain the maple flavoured water I was putting on my pancakes last year. Thank god for this site!

I'm about 800 ft. above sea level and have never had syrup at 7.5 degrees above boiling. I usually have to boil sap until 221 or 222 degrees to get syrup to 62-63 brix.
I dont think this is unusual, sounds like a lot of others have the same thing.
