Gonna be about 2 gallons its at 218 F and I havent been getting syrup til 222 F... getting close pics to follow. ..

All Done! Got another 1 gallon, 44oz for a YTD Total of 10 Gallons, 94 oz!
Keep it going Don. I want to see 15-20 gallons this year from you.:)

Why so much air space in those bottles?

+1 on the air space question. North American Maple Producer's Manual says to fill to with 1/4" to 1/8" from top to limit air space for bacteria and mold to grow in.

Never knew that... next batch. I know most folks use it so fast that's not a worry!
