The left syrup is what I made mid February and it has a vanilla taste. The right one I did a couple of days ago. So normal progression. Right one still tastes pretty good to me.

The middle one or the left one in the bottle picture I just bottled. It is lighter what I did a couple of days ago but it tastes horrible. At least to me.

My wife says it finally tastes like something. I was going to throw it away. It reminded me of the sugar beet syrup you can buy in Germany.

It tastes somewhat bitter and strong, and it did filter difficult to say the least. It tastes very similar to the Uncle Luke's brand I bought at SAMS Club earlier to have a comparison taste.

I am going to take it to some friends to taste, but if that is how Maple syrup is supposed to taste: I don't like it.

It was made from somewhat cloudy concentrate. Didn't smell bad when I boiled it, sap didn't taste different either.

Sounds like it might have been made from fermented sap, causing an off-flavor, although the bitterness could also be burnt niter.

Sounds like metabolic or maybe bud run. Might make good cooking syrup? The last 10 gallons of syrup from last year tasted horrible. Everyone who ordered cooking syrup, I made sure they tested some and they were happy and bought it.
