Thank goodness I had the safety switch installed with the Marcland draw-off unit.I had forgotten to shut the valve off between the flue pan and syrup pan after the last boil,so the syrup pan had flooded an extra 2" deep.I thoughtI would be okay,so just fired up the rig.I went to check the receiver came back to the sugar house to find the alarm sounding, blowers off and syrup drawing off at 225 degrees.I managed to stay calm through the whole episode, kept the defamer going to keep the liquid in the pan, temperature finally dropped and blowers came back on,then I had to re- introduce the syrup back into the pan so that it would filter properly. When my wife showed upto can syrup, she said she would have panicked, but after over 40 years of boiling I was able to keep my cool, but I would rather not have that happen again.
