The other day I had a batch of syrup cooking. I sat down for lunch and next thing you know...looks burnt! I quickly added some raw sap to stop the cooking. I tasted it and it tastes awesome, sort of caramelly and a deep maple flavor! No burnt carbon flavor at all, but it's dark brown. Does anyone ever purposely caramelized a but of syrup to add a more complex flavor? It's risky business I know, but I really like the flavor!
