Syrup finish

Do you all finish the syrup in the syrup pan on the evaporator or on a stove? Thanks

I draw it off as finished syrup from the evaporator and correct the density if needed after I am done boiling.

I do it the same way as Russ. If I was doing a higher volume of syrup I would with a finishing pan and oil or gas fired burner.
