Just watching my boil and filling my time with thinking....
I'm guessing that I am boiling off about 1 gal. per hour in my 12x16x6 restaurant pan on my propane turkey cooker.
Does that sound about right?

Hi Jeff. On a rapid boil you should be able to boil off a gallon per square foot of surface area. Keep the boil going by warming the sap as you add it if you can. Preheating on the stove or in a spare kettle will help. Or use a coffee can on the side of your pan with a tiny hole punched in the bottom of the coffee can. It will slowly drip into your pan and be warmed by the steam coming off your boil pan.
