View Full Version : Dual pan setup on a 2x4 arch

Just getting started at this. I purchased a Wesfab 2x4 arch and went with the dual pan setup. The idea I was told is to use the smaller pan as a semi-finishing pan. One thing I am unclear on is how do I know when to transfer to the finishing pan?

I have 45 taps set soon to be 100 feeding into 5 gallon pails and a pair of 65 gallon tanks. I have helpers that can check pails mid week but I will only be able to cook on weekends so I'll need to hammer down the way it looks.

I see a homemade RO in my future...

Aren't the pans plumbed together? The sap should go in on its own....as you draw off, more comes in. The float maintains the level of sap in the entire evaporator. You should start out with about 1.5" depth until you get used to it. Then dial down to 1" depth for best evaporation rate.
