Now I recommend everyone uses a Hydrometer but if you don't make enough to fill the Hydrometer cup ( BY Hobbiest ) or you can't get one for whatever reason then boil up to 7.5 F above boiling of Water then watch for sheeting. It may start to boil over and you will have to quickly lower the heat each time it does but eventually you will see it "Sheeting"

Correction I guess I was wrong on the Definition of Sheeting. But I do know that when I see it do what it's doing in the video above where I call it sheeting it's VERY close to syrup. It doesn't do that at 7.5 F above BP of Water it takes a bit more.

" That's not sheeting Don, or at least not what to look for. You need to look at how a little cooled syrup drips off a spoon. If it drips like water, it's too thin. If it has a little body the drips will come together and form a sheet. This picture I found on someones photo album online is the best I could find and in the ballpark."

Good amount of syrup there. Maybe somebody should add a forum full of "sugaring" terms, sometimes people have different interpretations or were told different, but nice little video anyways

I like that pan Don, you have on the propane heater, I use a pot, but your pan I like better.

Is that a buffet pan ?

7513 Here again a good pic of sheeting, will really let you know when you are getting close to a draw. A lot of oldtimers years ago, likely used just that. I use that, & a hydrometer. I keep a few on hand, in case one goes south or I break one....

Does anyone know a term for what it's doing around the Boiling Bubbles? Just Thickening?
