The dividers are for continious flow. The sap comes in one side then after a few hours boiling you can pour close to syrup off the other. No you dont need drop flues to run a divided pan. Drop flues will dramatically increase your boil rate. I did a drop tube pan and doubled the evap rate of my 2x6

If you are building a flat pan make the sides 8". You will need 3 or 4 dividers. Drop flue are used to boil the sap faster, you can't make syrup in drop tube pan. Good luck. Lee

With 8 inch sides how deep should I run the pan to have a good gph . I think with a 2x4 I should have a gph around 10 maybe 12 if I'm lucky . I'm planning on putting the pan on a 275 gallon oil tank evaporator with a blower anyone have a good design for a divider Pan

I have a 3x5 pan without flues and only average between 25 and 30 gallons an hour. The more surface area the better. If you do put in flues i would recommend at least 10" sides. my pan with flues doubled the rate of cook off.
