My best bet is that water got in your sap.

I saw that out of an old tree that runs even when it freezes. I boiled it down and my syrup was just fine. Disclaimer ---- First year first batch --- maybe someone with more knowledge will give you a little better answer. i am going to invest in a refractometer to check things like that. If it reads high sugar content then I think your assumption would be correct.

Taste before you boil. If it tastes good, it is good ;)

its good becuse your sap is concentrated, its better than goin in your front pan raw.
