After storing syrup, there was rock and crystals in the container. Has anyone experienced this and can the rock and crystals be used?

Syrup was too thick. Sugar crystals can be re dissolved.

I like the crystals to eat like rock candy. Sometimes I put a chunk in my coffee instead of sugar. Certainly don't through it away and enjoy it. I don't get them much anymore since by using a hydrometer I don't take it past syrup as often. To get the crystals you are likely around 2 brix beyond syrup. And like Thompson's said, you can redesolve with water and turn back into syrup.

Thanks for the info i re-heated and added water brought back to syrup with hydrometer and i guess question is should i add back through the evaporator syrup pan or just filter as is just done want crystals to form again or other syrup in syrup pan. ( adjusted pan thermometer so would not happen again )
