View Full Version : Do folks keep the heat on the finisher when they filter?

I start filtering my syrup at around 205 to 210. If I shut my propane burners off, buy the time I am at the end of my filtering, my syrup temp is starting to get to 185 or so.
LAst night I left the heat on low as I was filtering and kept my temp up to above 200. Filtered better for sure.
My question is do I risk effecting my flavor by heating the syrup that has been mixed with the DE? When I clean my canner, there are cooked-on sections of DE and syrup on the bottom, right above the burner rings.

We leave ours on low heat also and when the container starts to get low we shut her down. Has worked well with no problems and I clean the container out right away and have had no build up of sugar at all, Its stainless and keeps clean well.:cool:

we give the syrup in the canner an ocasional stirr. it keeps the DE and sugarsand from settleing and burning. before we start boiling in the morning, we give sap in the pans a quick swish. sugarsand that settled overnight could bake on

I usually filter in 5-7 gallon batches. Once the syrup is finished I turn the heat to low until I'm down to 2-3 gallons and then shut it off. I also run the finished syrup into a filter bucket where I mix in the DE, I don't mix it into the syrup in the finishing pan. I didn't like having to scrub out the baked on DE either!

Are you heating the syrup in your canner before you filter or do you have a separate finisher? I wouldn't use my canner for that because I don't want niter or DE to burn onto the bottom. I have a finisher and keep the heat on low and shut it off just above the drain valve. Keeping the syrup above 195 sure makes it filter easier. I don't have a problem with burnt on sugar or DE. Pumping from the press into the canner the temp is usually where I want it for canning.
