I ran about 20 -25 gallon though the evaporator (3X2) and I had to shut down. Got about 2 1/2 gallon so would you throw it back in the evaporator or shoudl I just finish it over a turkey cooker.

Since I haven't got an evaporator I don't know how deep the 'near syrup' would be in your pan, but I'm sure you realize that the more shallow your 'near syrup' is in the pan the easier it will be to burn your entire batch. Because this is your very first batch, and you've not got the benefit of experience behind you, I think you should just take the easy route and put the 2 1/2 gallons over your turkey cooker. You'll end up with about 1/2 gallons of syrup, so you don't have that much further to go. It won't take very long.

Keep an eye on things as it boils down and enjoy the thrill of your first batch!
