In my neck of the woods in central New York, it is thought that a south wind (regardless of good temps) will inhibit sap flow. That is counter-intuitive to me. I saw this last weekend however, I had picture perfect temperature fluctuations, predominately south wind and below average sap flow. The "old-timers" say a north wind is best. Any scientific explanation for this?
