View Full Version : How Long Can I Keep "Near Syrup"

I have about 1 gal of "near syrup" (pulled from boil at 215 degrees)

Have in freezer awaiting more sap for evap.

What's the max time this will remain good enough to do as above, or is it something I need to finish and bottle now (probably about 17 oz). Have zero sap flow here for past to days and perhaps the next two as well.

In the freezer? Pretty much indefinitely, I would guess. Certainly months at least.
