Unrefridgerated almost sap

Can almost syrup ie syrup drawn off around 219+- be kept a day or two in 40'F temps before finishing? It would be stored in a soda keg.Thanks,Lee

I don't know about 219 but I put one quart right off the stove on the 10th of Feb then added it to the next batch and the next and so on. I now have 3 quarts in the refrigerator. All seems well and waiting for the next boil. Things have been slower then last year. Odd as it seems its still light in color.

yes,at 219 it is so close to syrup that at 40 degrees,you could keep it a month or more without any problem,ihave kept it at times over a month

i keep near syrup several days and batch finish but have been hesitant to go more than a few days. Nice to know I can go longer if necessary.
