Storing unfinished syrup

I'm small scale & boiled down my 30 gallons sunday to 3 gallons. I have it in the fridge. How long can I safely keep it before finishing it off?

The sooner the better, but I would think a week or 10 days would not harm anything. You have already sterilized it by boiling so it will keep longer than raw sap.
