Is there a actuall ratio for sap % to syrup. For instance if your sap is at 1.5 % would it be 40 to 1? whats the scale? thanks

The formula is 86/x : 1 with x being the sap percentage.

Rule of 86 gets you close, but was devised when the minimum brix was 65, divide 88 or 89 by the sap percentage to get closer to the right number.

That does not make sense. If I start with 32 gallons of 2% sap, 16 gallons of concentrate is going to be at 4 %. 8 at 8 %. 4 at 16%. 2 at 32% and one gallon at 64%.
So it should a calculated 33 to 34 gallons of sap that produce one gallon of syrup at 66%.
Where do the other 10 gallons go?

2% takes about 43 boil away 42 keep 1, 4% takes about 21.5,8% takes about 10.75, 20% takes about 4.3

^ What he said. It wouldn't take one gallon of 64% to make a gallon of syrup at 66%, it would take 1.37 gallons approx.

89 divided by your sugar percentage is how we do it ! Just a guide line.
