Im finishing off my syrup. water boils @ 211 here & temp of syrup is @ 224 but still not syrup according to the hydrometer. when i test it the hydrometer drops to bottom of cup and stays there. should i keep boiling even though im over the 7 deg above boiling?

your hydrometer has a crack in it

i just checked it again and it did rise a bit. to about 53 brix.

I would trust the hydrometer unless it is visible damaged. Thermometers are notoriously inaccurate.

Your thermometer may be out of calibration. I bought one from Tapmytrees.com and found the glass part moved inside the brackets.
If your hydrometer looks in good shape go with that. Be sure to warm up cup with syrup before testing.

we draw off by hydrometr one night we kept checking and checking it would not even bob. Not five minutes later my wife comes back in the shack and says she can smell it we drew some off and hydrometer just about went thru the shack roof,luckily we got a draw and only one little spot of a schorch on pan which cleaned rght off. We draw off now by hydrometr and judgment ,you can always finish off a little and be safe..../

thanks for the help guys. turns out my thermometer was way off. the other night it was dead nuts. hydrometer works just fine.
