Hello,
I have D&G evap and used to finish right off it. I decided this year to draw off a degree early and purchased a 16x32 ss finishing to get a more controlled finish there. My question is how many inches of product should I put in the pan to do a finish batch? The stove has 2 60000BTU burners. I do use defoamer so that will aid in a boil over, but I'm wondering if my batch is too big it will take too long and go dark.
