Finished my first 1 1/2 gallons of syrup yesterday. Looks like light amber. Looking forward to a good run and boil today. I am still learning a lot by mistakes but the first batch tasted great.

A question for the more experienced : do most people drain the pans after a boil or can you keep a level of concentrated sap in them and wait for the next boil ?

Just a small comment- your mason jars look underfilled and that may affect it's shelf life. You want to keep the amount of headspace as small as possible. It may be you're packing too hot. The hotter the syrup going into the container the more shrinkage you'll see on cooling. Don't be afraid to pack to 1/4 inch of the top. That space will get larger on cooling.

Now, can we start with french toast or buckwheat pancakes? :)
