View Full Version : Keeping Boiled Sap

I'm a tiny newbie, evaporating over a turkey roaster in a 12"x20"x6" deep SS steel pan.

I know that my miniscule sap collection (8 taps) will not yield great quantities of sap and that the raw sap cannot be stored long before boiling.

Can I boil down 5-10 gallons of sap at a time and then freeze/referigerate the "near syrup" until I have sufficient quantity for finishing inside?

Yup, did this for the first few years and it works great. Freeze in a SS pot or wait until it cools down and freeze in a food safe plastic bucket.
