Well there was a Mix up on my Bottle Order and I thought they were coming 2 days ago and for sure by this weekend but I guess I'm not getting them til Monday or Tuesday.

So do I just cool the syrup down and refridgerate and then re-boil it, filter and bottle when I get the bottles?

I have such great freakin luck I tell ya!:evil:

Short of feeding all of us I think what you were planning on doing will work fine:)

first of all, why are you buying bottles? Save every bottle that you empty over the next year, whether it's spagetti or olive oil, and you'll have plenty. Just chill it in the frig, reheat it to 180 degrees, you're fine.

It's best to buy new ones, cause bottles that have been used before can have the old products smell or taste, and you don't want that in your syrup. New bottles arnt that expensive if your not buying a lot of different kinds

I bring my syrup up to just under 200, check the density, adust as necessary, refilter it and map sure it stays above 185 when it goes into the jug.

For a small batch for my own use, I wouldn't bother refiltering.

Or just buy some glass mason jars!
