I tried making maple candy for the first time last night. How long does it take after poured in molds to set up? Should it be covered or not? Should it be left out @ room temp or kept cool? Any help would be greatly appreciated.

Should set up in 5 minutes but I wait till I cant really feel any heat when my hand is close to the mold above the candies, maybe 20 minutes or so. Good luck. Candy can be tricky. lots of factors.

the candy should set in a few minutes and if it doesnt you didnt whip it enough

Sometimes temp will also effect it,if you let it cool to long before putting t in molds,it will also be soft,let it cool to around 200-210 degrees,then stir,watch for a color change,pour it in molds quickly

Cook your syrup a couple of degrees higher, and your candies will set up better
