View Full Version : How Long To Stir Cream

I have been making cream today. Made 3 batches. 1st 2 batches heated to 235deg cooled to 78 and stirred until it turned almost the color of peanut butter. Seemed a little stiff after cooling. Next batch heated to 233deg and stirred the same. Still seems a little stiff. Should I decrease the temp a few more degrees when heating or maybe be stirring less.

Next I will be trying my hand at candy. Kids are begging me to make some.

Keep stirring a little longer. The first time we made it thought it was done and surprise it just changes.
