My pans are divided. I have a boiling pan with three dividers. I have a feed from a tank and it feeds into the boiling pan as the sap moves through the three dividers to the front. Then it goes into a finishing pan with two dividers and a drain on the opposite side of the finishing pan. How do I run the sap through? How much do I take off at a time and when? Can I do a constant flow with it even if I have to drip it in or do I still have to do it the batch way?:cry: any info would be great thanks Kacey:D:D

You need to match the sap flow with your evaporation rate. You want the drip / trickle to maintain the depth of sap in your pan. Only draw off a bit of syrup at a time and only when it is near syrup. You may want to finish the almost syrup on a stove where you can control the temperature more easily. At the end of the day just leave the sap & syrup in the pan for the next day of boiling.
