What is the required distance between the top of the grate to bottom of pan?

I don't think there is one.
I sopposed you would want enough space for a good size fire without wood hitting the pan.

I wondered the same when I did my arch. I measured my real woodstove and it had I think approx. 15 inches, so I left approx. the same, maybe a bit more room and can raise the grate if I want it closer to the pan. Larger lets me be lazy if needed and load more wood if I hafta walk away and stuff it.
People here say go larger,,,, "Easier to make smaller, Hard to make bigger".
Applies to ramp angle, firebox, pan, wood supply, sugar shack, garage, etc...LOL.
Good luck, I,m sure you will do fine.
