I have a homemade 2 X 3 evaporator.....it has a 6 foot 8" stack.....would adding another 2 feet improve my boil?

The stack should be at least 2 times the length of the evaporator and it looks like you've got that covered. That being said the taller the stack the better the draft. Adding 2' isn't going to make much difference but every bit helps.

I agree with Russell's comments. I'm new to the maple syrup world...just started this year but I know the stack height is important to draft. 2 ft more on a 6 ft stack will give you 33% more draft or about 15% more air flow which should help increase the boil rate. If you double the stack height you would get about 40% more combustion air flow which is a pretty big deal. This will allow you to burn faster and/or create more turbulence under the pan and higher convection heat transfer rates. This assumes the arch is pretty tight.

Wow...12 feet f stack...I'ma need some suspension cables, then.....I will add the extra 2 feet and give that a try wednesday....right now tharch is nowhere as tight as I would like, pending the arrival of a new pan....thank you for your input
