Hey a quick question,, I just started my evaperator today with just water, worked great. But when I drained it I noticed the the front pan which has four sections, that the middle two sections was lower then the outer two sections. The water drained out of the outside but had a 1/4 to 3/8 of a inch of water left in the middle sections. Is this a problem or normal? I am worried that the syrup will just sit in the middle sections and get over heated.
