Can anyone give me info on the above? What is too high? what is too low?

Lots of theories here. About 2' above my arch I have a probe thermometer that runs close to 1400. Yes I burn a bunch of wood, but I make a lot of steam.

We like to run around 1000-1200. Refire around 850.

We have one of the stack thermometers you get from Leader and when it goes beyond the 1000 deg mark there is only a "F" to signify that you are looking at farenheit. So last season we came up with a new term- When you put the needle all the way past the 1000deg mark and it is pointing at the F, you just "dropped an "F" bomb"

Thats my goal this year,,,800, I hope I get that with the blower going !!

If it's a straight up forced draft arch you're going to want to see 1,000 to be boiling fast enough. Force 5's are 800 or lower because they have to have a heat exchanger of some sort, reclaiming flue gas heat to preheat their injection air hot enough to achieve fuller secondary combustion.
