I received an old pan that is just untreated steel. Wondering if this is ok to use or should I upgrade to stainless..? Pan has been used many times in the past for syrup by previous owner .. any thoughts..?

last owner used it for syrup,so why cant you??? if its for personel use i dont see a problem. i use plain old cast iron pots and pans everyday and there nothing but untreated iron................

I have a pan that is regular steel, same story as you, got it from a guy who used it for years for syrup. Each year after the season I oil it very well with any cooking oil, lotsa oil. Before the next season I boil water in it, open the valve, let that pour out , wipe it well, reboil more water till she is clean. I then get a bag of sugar, clean water and boil that. I call that treating my pan,lol. It works for me, no off flavours, good old great syrup. I do have a stainless pan also and that is a dream compared to the regular steel pan. I do use both as to get through my sap.

I,m sure you will be fine, watch for rust.
