looking to make myself some pans. In planning to get the sheet metal I have been going back and forth on pan height for the syrup pan and drop flue pan. Is 6" too short for syrup and is 8"-10" too short for a flue pan. Thanks any input would be appreciated

depends on the size of the pan, on the syrup pan i wouldnt go any lower that 10", on the flue pan i wouldnt go lower than 8"

these would be for making a 2x2 syrup pan and for a 2x2 to 2x4 flue pan

You want the flue pan higher than the syrup pan, it boils much harder. 10" and 12" would be a good height, no lower.

I can say that even with defoamer I have seen my pans boil 8-10" up............

I built mine at 9" - after the first boil I built a shield for the front of the flue pan as the geysers were easily clearing the sides. Syrup pan is fine, if I were doing it again, I'd go 12" for the first foot of the flue pan. I have straight sides. If you build a splash lip into your sides, you can probably go lower.

I just bought a set of pans from Smokey Lake Maple (Jim Schumacher). They measure 8 3/4 inches. I think it's better to err on the side of tall. Foaming syrup can grow fast and high. I always watch it close when it gets near to temperature and have some defoamer handy.

I made mine 8",but i use oil if it starts foaming i flick a switch and it goes down. Good Luck this year. Lee
