View Full Version : Where did the syrup go ?

I have a question regarding bottling and evaperation.

When i bottle syrup, i bottle at 180 degrees into glass 1litre containers. My syrup is 66.5 acording to hydrotherm and my acgo digital hydrometer. I fill the bottle to the top and place the cap on and place it on its side to sterilize the cap, pretty much standard bottling techniques. My question....

When i come back the next day I notice the syrup level drops about 2inches down the neck of the bottle. What happened to that 2inches of syrup? Does the syrup increase in brix through some sort of internal absorbtion? Just curious to what happens to the syrup?

That would be the law of thermodynamics. When a fluid is heated it expands, when cooled it contracts. You syrup didnt go anywhere, it contracted as it cooled, if your bottles are completely sealed, there will be a slight vacuum now present.

If it didn't contract you would not have a good seal. The vacuum in the bottle is what gives the seal.

Actually both of the responses are wrong, your neighbor is stealing it. LOL Actually they are right on.
