I'm having a new 2x2 syrup pan made. Currently my pan has three eight inch channels. Would I have a better gradiant and more consistant draw offs if I went to four six inch channels. Thanks.

You might get a better gradient, but I've never seen a 2x2 pan with more than 3 dividers, I don't think it would be worth the extra money

My 2x2 front pan has 4 compartments (3 dividers) I like it that way. You also change where you draw if you go from an odd number to an even number of compartments.

How important is the ability to reverse the syrup pan? A four channel pan would not be reversible.

This depends on which way dividers go/ where draw off is.

I just made a new 12"x24" syrup pan for my evaporator. Is there much sense adding a divider? I will not be able to reverse my pan unless I add two dividers, would three 4" channels be too small to be worthwhile?
My sap pan is divided.
