They trap palm trees, boil down the sap and make sugar

There was a big discussion here with a palm sugar maker several years ago. It is a fascinating process. They cut off the end of a spathe at the top of the palm and collect the sap that oozes out at high sugar concentration I think it is 20% or so. The cut stops flowing daily so needs to be recut often. They create a lattice of planks tree to tree at the top to more easily get to the top of each palm to recut.
