Saw the copper pans posted up in the classifieds sections and was wondering general evaporation rate per square for compared to SS. The maker claims the 18x36 pan set can handle up to 150 taps. Just wondering if that is realistic or not.

i dont think there is any way you would want to try 150 taps on that size pan, im sure you could do it, but i wouldnt want to boil for 24 hours everyday. the copper will start to boil alot faster and will boil better cause it has ALOT better heat exchange than stainless, which is actually pretty bad for heat exchange

Ya i bet as the thermal conductivity is something like 20 times higher for copper vs SS, but I still dont know how much that will have effect on overall boil rate comparatively

Try sending Yeast Pimp a PM, I think he has a copper flat pan. I'm not sure if he has tested boil rate yet.
Copper will boil faster, but my guess is that 150 taps is a little high for a 4.5 SF flat pan.

It has 8 drop flues in the sap pan and a copper pre heater. Last year I ran 68 taps on a leader 2x4 vermonter pan with a pre-heater. I could have easily ran 2x that many. I bet the evaporation rate in that copper rig would be close to if not better than my 2x4 stainless. If I was in the market for a small evaporator I would seriously consider that copper rig.

Maybe it only has 6 drop flues its hard to tell from the pictures.
