What kind of evaporation rate would i be getting with a 18" x 48 dominion flat pan with a blower, steam hood, and pre heater?

what kind of preheater? Under the hood? and what kind of blower, Over or under the fire?

I'm thinking you'll get 6 to 8 gph

I am thinking alittle more than that depending on the answers to my questions. Thinking 12 gph
