front pan steam hood height??

Hi, we are a few weeks away from hanging our new steam hood over our front pans on the evap. Can anyone offer any advice as to how high off the front pans we should suspend the steam hood? We are looking for a set dimension so hopefully we will only have to hang it once and not adjust it after. Thanks in advance for any help, all advice would be greatly appreciated....

"...,while the syrup pan hood is normally suspended about 18 inches above the pan so that the operator can observe and have access to the boiling sap."

if you have doors on it, why not just snug it up with the top of the pan?
