Am looking into a bubbler for my evaporater. Was wondering how the people that have them like them and if anybody has ever built there own. If so any plans or thoughts ?

From the info I have read, they help in making lighter syrup but slightly reduce evaporation rate.
I bought an air injector last year and love it. I don't use defoamer any more.

How much do these usally run for very large
evaporators

Probably just one for the flue pan would suffice. I have it in my 4x12 wood fired and often feel like I am cheating for the amount of Fancy syrup I now make. Cost was about 2 grand 4 years ago and it fully paid for itself in better bulk price in 2 years. I know of guys who have made their own but I'm not particularly handy so purchased mine. Drawbacks...Niter will plug the airholes so keep on top of cleaning it and it is a noisey SOB. I have my blower pump out in the woodshed but it still is a releif when I shut it down.
If you want to get away from using defoamer you will also need it in the syrup pans. For a 5x16 it was about $3500.00

Just make sure you keep it at least a foot away from the draw-off area, otherwise the cold air blowing in may screw up your temperature measurements there (and the auto-drawoff), which can result in bad things happening.
