Ok im sure this has been asked a few times. Being a small operation does anyone think it would be fine to make a bunch of (almost done syrup) and then finish it off and bottle it at a diffrent time when we have plenty to do? Thanks

How long between "almost done" and bottling and how "almost"? How is the almost done syrup going to be stored? Almost done syrup isn't going to keep long unless you freeze it. Proper density helps preserve it. If you mean more than a few days then imho you'd probably be better off packing large filled containers of syrup of the correct density and at proper packing and sealing temps for later rebottling.
It is better to stockpile almost syrup for a week rather than stockpile sap for a week at any temperature.
Kind of funny..at the end of last year I dumped the remainder of "almost done" syrup into a metal pot, put a lid on it and put it in my fridge. I would check it here and there to see if any mold grew..well, it went from last spring to about September in the fridge when it finally got some mold. I dont know what the brix is of that syrup but its definatly not 66-67 that is for sure

We do. draw off at almost syrup, filter and freeze in 3 gal square food grade buckets with lids, then finish on gas and bottle later. no problem and bought another freezer this year. Takes a load off not to have to do it all at once. Takes a while to thaw out the buckets though and everything has to be filtered again.
