i have built the frame for my new arch. 2x7 overall. i was planning on a 2x3 syrup pan,2x2 sap pan that i already have,a 1x2 pre-heater, and the last 1' taken up by the flue stack.my 2x2 pan that i already have is 12 ga stainless, no dividers as i used it for batch process on a barrel evap. if i can't use this pan, can i make a new pan out of a 4x8 piece of 18 ga. stainless?2x6 wih 1' sides. and add dividers? otherwise i would use the 2x2 pan i have and then have a 2x3 or 2x4 pan made. i have access to a good welder to fab these. i don't want flue pans as i don't need to make 50 gallons of syrup. maybe 15 -20 gallons. what are your thoughts on this?

15-20 gallon of syrup is allot of sap and without a flue pan that is gonna equal allot of boiling hours

I have made 7-8 gallons with my present setup. Long boils are the norm for me. I have a lot of friends that stop by. Just looking to make the same amount little faster.

I would definitely go with the thinner gage stainless with dividers. My first pan was 20 ga SS 2 x 5 with 3 dividers. My calculations were around 12-15 gallons per hour depending on how often we stoked the fire. Last year we added a dropped tube pan a bilge blower and got up to around 25 gal per hour.
