View Full Version : Amount of Syrup Needed for Candy Molds

I have a rubber candy mold for 12 maple leaves and I'm guessing they are an ounce of candy each. How much syrup will I need for the candy to fill them? Is it as easy as 1 ounce of syrup makes an ounce of candy?
It's the only mold I have. If I make multiple batches, do I have to clean out the pot after the first batch or does the left over candy in the pot seed the next batch and make it easier?

i just guess with the amount, you will eventuly know by looking at it, probably about 14 ounces of syrup, after you put it in the molds just pour new syrup in the pot on the hardened candy in the pot and it will disolve. also crystal coat your candy and it will be better and last longer
According to Cornell's confection note book 1lb of maple syrup at at 66 brix becomes .73lb candy at 88 brix.
When I make multiple batches I do not clean pot between. I also throw broken pieces back in when cooking next pot.

I know nothing about making maple candy. My kids are asking me to buy a mold so I might do that this week. What temps do I bring my syrup to in the pot? How do you crystal coat your candy? Thanks

I go just go just under 150 and I just let the candy sit in syrup for a half hour after it cools down

Not a scientific study, but I plan the amount of syurp I start with to become about half as much by the time it is candy.

I'm guessing the 1 oz. leaves are actually 1 oz. by weight. So, my mold of 12 leaves is going to produce 12 oz. by weight of candy. By the Cornell Notebook you cited, I will need 16 oz. or 1 lb. of syrup to fill the mold (give or take a little for spills, etc.).
Then my question now is how much liquid syrup is in 1 lb. by weight of syrup?

Syrup is close to 11lb/gallon so you need 1/11 gallon. 128liquid oz/gallon so 128/11=11.64 fluid oz should be 1lb
