Here's the VMSA requirement for lights. If you check out their website, they list the certification requirements.

Lights must be protected by slip-on tubes, shatterproof coatings, or shields wherever they are exposed to
sap or syrup.

Lighting in the shanty is like building a garage --- nobody ever wishes they had done it smaller.....

I have a 12x20 sugarhouse and I went with 4 of these:

I spaced them out evenly in a square shape. I went with 4 of them off of advice on here to help cut down on shadows. It was a good call.
I started at 60W equivalent CFLs and moved up to 75W equivalents right away. The 75Ws are okay, but I think I could have gone with 100Ws. I found out I like plenty of light. Start at 75 and see what you think.

I have simple light fixtures around the perimeter at a height of 8 feet. I also have two floodlights one aimed at the syrup pan and the other right into the flue pan hood door. I try to stay away from flourescents due to the mercury hazard if one breaks.
