Is there a Mathmatical equation to figure out the max evaporation rate of a specific pan with a specific surface area, or are there just to many varibles? :D

Yes there are alot of variables. A flat pan you can estimate about 1-2 gph per square foot. The variables include what type of fuel, flat pan or flue pan, the number of flues and the size of them, pre-heater or not, etc.
What exactly are you trying to calculate?
If you want to buy or build one state what you are looking to boil per hour and someone will help you size it properly.
