Ihave some syrup that is testing at over 60 on cold test of hygrometer.
I would like to know if I refrigerate it, can I mix with next batch and thin it back out some?
Then I will bottle it up.
Is this a way to save otherwise fairly thick but absolutely delicious syrup?

Yes, blending syrup to get the grade, taste and consistancy you want is OK.

Hot syrup is 59 brix on hydrometer (211*F at testing)
Cold syrup is 66 brix on hydrometer (68*F at testing)

I'm not familiar with a hygrometer? Is it like a Hydrotherm? or are you talking about a Hydrometer?
On my chart, syrup should be 66.9 BRIX at 60 Degrees
Or 60 Brix at 193 deg.
and some hydros are different. MY hydro is calibrated to read the syrup at 60F and that will be 66.9 brix (VT standard for syrup).
